I want to use this for mining, which generates a lot of heat. How much heat does this server rack generate?

You may want to use Mesh doors server rack which has higher ventilation capacity.. The Server rack itself doesn't generate any heat.

I am moving from an old server rack and have 2 48 port patch panels that are already punched down. Can I fit them through the access holes in the roof

Maybe, Holes are approx. 4 inch by 15 inch. Consider wall mounting them and running patch cables to the rack
