Yummy, our new favorite!
I am insulin resistant and was concerned about carbs so have avoided oatmeal for a long time. A diabetic friend who has to take insulin shots told me about this oatmeal, said it does not raise her blood sugar! I thought this was just a fancy type of oatmeal, and had no idea that the steel cutting changed the fiber, consistency and texture of oats this much, and allow it to not raise blood sugar. It is amazing! We love the texture so much more than mushy regular old fashioned oats. This feels like you are really eating something.I have been cooking this in my InstantPot pressure cooker : 1 c steel cut oats, 3 c water (I love unsweetened almond milk instead), and I add cinnamon. Cover and cook on manual 4 min at high pressure, natural pressure release. Total time is less than 30 min, perfect every time, and thickens more as it cools. I refrigerate extra servings and it reheats nicely and is still great days later. We sweeten with honey, and I add butter and a little cream to mine, hubby adds milk.This does not raise my blood sugar, and I do not feel hungry before lunch. The fiber count reduces the carb count making the net carbs lower! Our new favorite breakfast!

Take time to enjoy real, wholesome food.
First of all, the cans may arrive dented, but when the can is empty, one can push out the dents easily, even if you are arthritic and elderly, as am I. I use the cans for various items in the sewing room. With dry products, a dented can is not an indication of possible botulism, as one reviewer worried. It does take some time to cook, but it is well worth it. I have only coffee at breakfast, and eat oatmeal at lunch. I use two cups of water and half a cup of oatmeal, and have found cooking smaller amounts does not work well. I add cinnamon, because both the oatmeal and cinnamon are anti-inflammatory, and it tastes good, too. This oatmeal is real food. It is wholesome food. It is worth the wait for it to cook, and worth sitting down to savor. It may not suit those always in a rush, but life is more pleasant if one slows down a bit to enjoy it. The texture of the oatmeal is not the same as the quick stuff. When recommending the oatmeal to my daughter in law, I suggested calling it porridge when introducing it to my under five year old granddaughters, who are used to quick oatmeal. If it is called something different, a new and intriguing word, they will give it more of a chance.
