Has anyone had problems with the adhesive pulling paint off with it when the screen is taken down?

Yes. Had to repaint area of slider door frame where the velcro was installed when we moved. The paint wasn't primered beforehand which I'm sure made a difference.

Size instructions are extremely confusing, if my door is 30x80 and my frame is 36x82, which should I buy?

Buy 2 and use the Velcro to put them together. Just need a pair of scissors.

can the screen be cut down to correct size?

I don't think so. You should try and buy one as close to the size of your door as possible. It can be pulled up at the top so that it doesn't drag on the ground if necessary.
