Companion to the Dvd. I expected additional material and recipes with measurements but it was a reiteration of the Dvd. I was disappointedBut I should have read more of the description of the item. This was my fault. On the other hand, I bought it used so it wasn’t expensive.

Wonderful book and video series.

I love this book. Chef Biwa had a wonderful way of explaining how to cook. I first watched this video series and was so successful trying his recipes as I watched the shows, that I wanted a permanent copy of the recipes. Sure enough, these recipes are turning out for me, I think because Chef Biwa bothers to explain the fine points of HOW to cook, not just what to put in. It is so sad that he has passed away, but I hope his family finds comfort that even long after his death he is teaching people how to cook. RIP Chef Biwa. Bon appetit

This cookbook is written by a chef who surely knows to include amounts for the ingredients.

I've taken a number of courses at the CIA over the years and they have all been excellent. (My wife is looking at a dish washing school of the same caliber, but hasn't succeeded as of yet..., (-; ) This book is the companion book to the "Great Courses" course of the same name. Course/book covers much of the same materials in courses as "Beginning Chef Skills", "Beginning Knife Skills", and then goes off from there. These CIA guys are the champion chefs and Bill Biwa is certainly one of them. I can't recommend either the streaming course (with this book) or the real life courses at the CIA enough. Time spent in a CIA course will improve the rest of your life. It's as simple as that. Enjoy

This book has given me some great ideas.

Beautiful photos, good overview of cooking methods, but strangely NO QUANTITY given in recipes, just ingredients. Odd and disappointing.
